To enjoy your hot sauce you must beat the heat!

How enjoyable and addicting it is to indulge our cravings for spicy dishes. Whether it’s fresh chilies, our favorite hot sauce, or smoky and mouth-watering barbecue sauces, we can’t seem to get enough.  But do you find yourself reaching for that glass of water for relief at times and not finding it?  Let’s see if we can find a few ways to beat the heat and get a little relief when we really need it.

As many already know, the spicy quality in food is caused by capsaicin.  These compounds give us tremendous pleasure in the right quantity, but can also contribute to the pain we experience if we take in too much.  Our first instinct might be to reach for a glass of water, but capsaicin is not water-soluble.  Now we understand why water simply does not give us relief.

One often times overlooked remedy is rice.  That would explain why so many cultures that feature spicy food incorporate rice as a primary component of their diet. Milk is also a tried and true remedy for a burning mouth.  Capsaicin is fat-soluble, so the fat in the milk tends to act as an insulator against the heat.  And the proteins in milk also take some of the burn out of spicy food by binding to the capsaicin.
